chitin

Chitin is a large, structural polysaccharide made from chains of modified glucose. Chitin (C8H13O5N)n (/ˈkaɪtɪn/ KY-tin) is a long-chain polymer of N-acetylglucosamine, an amide derivative of glucose. As the second most abundant polysaccharide in nature, it is a primary component of cell walls in fungi, the exoskeletons of arthropods such as crustaceans and insects, and the radulae, cephalopod beaks and gladii of molluscs. It is also synthesized by at least some fish and lissamphibians.

Chitin is a primary cell wall component found in fungi but not in plants. Chitin and its fragments, chitin oligosaccharides (N-acetyl chitooligosaccharides), act as a group of crucial pathogen elicitors perceived by plant cells to trigger PTI.
